.....well, it has been forever since i have posted a recipe....i honestly have been bad about cooking "real" food at home, especially those that are *blog worthy*....but now things have settled down a bit around here and the beautiful weather is getting me back into the mood to cook good....oh yeah!!
City Hall Diner's Shrimp & Grits
this scrumptous recipe was posted in our local newspaper...and i am so glad it was.....wonderful!! it was my first attempt and shrimp & grits....turned out great!! i will be making this again soon :)
City Hall Diner's Shrimp & Grits
1 cup cooked stone ground grits (i added s/p, butter, a little cream & shredded parmesan cheese to my grits)
1/4 cup olive oil
30 peeled shrimp 26/30 in size, deveined
salt & pepper to taste
1 cup grape tomatoes, halved
3 cups baby spinach
1/4 cup lemon juice
1/4 cup white wine
1 1/2 cups heavy cream
8 slices bacon, cooked crisp & chopped
- put olive oil in a large saute pan over high heat. add shrimp to pan and season with salt & pepper. cook for about one minute
- add grape tomatoes and spinach and cook for another minute
- add lemon juice and white wine; cook for one more minute. reduce heat to medium. add heavy cream and bring to low boil, stirring constantly.
- reduce heat to simmer. cook until cream is thickened, about 7-10 minutes.
- salt & pepper to taste
- portion prepared grits into four bowls. ladle shrimp saute over the grits. top each with chopped bacon.
....i hope you guys try this....you will not be disappointed...so yummy!!

Man, that looks delicious!! I LOVE Shrimp and Grits! Thanks for the recipe. Also, the disney pics are so cute. I cant wait to go with our little ones, but I think it will be a few more years. :)
